Kung Pao Chicken

4 oz cubed chicken breasts
2 tsp soy sauce
2 tsp fat-free vinaigrette
1/2 tsp red pepper
1 minced garlic clove
1 tsp olive oil
1/2 cup chopped onion
sliced mushrooms
2 tsp green onions
2 tsp peanuts (optional)

Saute onion in oil. Add chicken and saute. Add other ingredients and saute for 5 minutes.

Serve over cooked brown rice.
