1 lb bone-in skinless chicken thighs (or 1 lb boneless chicken breast)
1/2 cup lime juice
1 1/2 cups chicken broth
2 cloves garlic, finely chopped
1/2 tsp thyme, dried
1/4 tsp black pepper
2 tsp oil
1 1/2 cup instant brown rice
Combine all ingredients except rice in a crockpot and cook on low 8 to 10 hours.
During the last 15 minutes, stir in rice.
