1 cup cooked wheat berries
1 1/2 cups cooked broccoli florets
1/2 cup chopped green onion
1/2 cup diced carrot
1 can chickpeas (or equalivent cooked dried beans)
Dressing:
1/4 cup balsamic or cider vinegar
2 TBS olive oil
1 TBS chopped fresh basil or 1 tsp dried basil
1/4 tsp paprika
1/8 tsp salt
1 clove garlic, crushed
In a salad bowl, combine the wheat berries, broccoli, onion, carrot,and chickpeas.
In a jar with a tight fitting lid, combine dressing ingredients; shake well.
Drizzle dressing over vegetables and toss to coat.
Chill until serving.
